Cake Pops {Child Photography; Portland, OR.}

My girls are really into Candy Land right now, it seems like we play the game almost daily. The highlight of the game is when one of the girls gets a character, they don’t even care if it puts them back to the start of the game, they just love imagining that they are Princess Frostine or they’re just arriving to play at Grandma gumdrops. These yummy treats remind me of a delicious forest that my girls just might imagine up in their very own Candy Land! They are delicious and so simple to make (promise), I’m a terrible baker but even I could handle these yum-yum’s!

We made these cake pops for a special dinner we were attending last weekend. After trying one, one of the boys came up to me  asking if I could ‘please get a copy of the recipe to his mom’ I asked if he would like me to email it to them and he thought that sounded great. It’s just amazing how our kiddos understand electronics, the need for a recipe and the power of email! I don’t remember any of that registering when I was 6 (okay electonics didn’t mean much back then, but still) kids today are just so stink’n smart!! Max, here is the recipe – hope you have a blast with it! The girls and I are already planning fun green ones for St. Patrick’s Day!

Cake Pops:

1 box chocolate cake mix (cook as directed on box for 13 X 9 cake)
1 can cream cheese frosting (16 oz.)
wax paper
1 lb pkg. white candy melts (with a few drops of food coloring for desired shade)Sprinkles (optional)
Additional: Lollipop sticks /  Styrofoam Block (for sticking pops in)

  1. After cake is cooked and cooled completely, crumble into large bowl.
  2. Mix thoroughly with 1 can frosting. (I use the back of a large spoon, but it may be easier to use fingers to mix together. But, be warned, it will get messy. Also, you may not need the entire can of frosting, so start out by using almost the entire can and add more if you need to.)
  3. Roll mixture into quarter size balls and place on wax paper covered cookie sheet. (Should make 45-50)
  4. Melt chocolate over double boiler. (I melt small batches and just add more melts as needed)
  5. Dip the tip of your lollipop stick in a little of the melted candy coating and insert into the cake balls. (Insert a little less than halfway.)
  6. Place them in the freezer for a little while to firm up.
  7. Once firm, carefully insert the cake ball into the candy coating by holding the lollipop stick and rotating until covered. Once covered remove and softly tap and rotate until the excess chocolate falls off. Don’t tap too hard or the cake ball will fall off, too.
  8. Place in a styrofoam block to dry.

Kalli - I think these look ABSOLUTELY DELICIOUS! And they are adorable as well. I can’t wait to make these with my daughter! Ooh. They could be really great for her birthday party coming up. Great timing!

Jenna - OMGosh its the cupcake things those are soooooo good I don’t know how you did it but I think those are probably me new favorite desert…. yum yum yum when I see you next let’s make them, that would be so fun to bring to work
